Imagine, you take the ingredients of your breakfast (cottage cheese, nuts and fruits) and make a delicious and above all healthy cake? With the recipe below, this dream becomes reality and you can have a delicious breakfast with “cake”.
The bottom:
The bottom is made of nut mix (unsalted) together with dates and coconut oil. Grind the nuts in a kitchen mixer and then add the pieces of dates with the melted coconut oil into a sticky ball. Place this in the round baking pan with a spoon – make it as smooth as possible, the bottom is covered with baking paper. Optionally, you can place the dates in a little cup warmwater for 5 minutes.
Put the baking pan in the fridge so that the bottom can stiffen.
The cottage cheese layer:
Soak the gelatine sheets in cold water for 5 minutes. Meanwhile, puree the forest fruits (with the cleaned hand blender / food processor). Heat the forest fruit puree in a saucepan and let the gelatin leaves melt in it.
Return the raspberry puree to the mixing bowl of the hand blender / food processor and fold in the quark. Mix into a nice light pink mixture.
Pour the quark mixture over the bottom, sprinkle a few nuts over it for a nice effect.
Let the cheesecake set in the fridge for at least 4 hours.
For the bottom:
– 170 grams of fresh dates (from the market)
– 57 grams of coconut oil (melted)
– 300 gram nut mix (lidl)
For the quark layer:
– 500 grams of low-fat cottage cheese
– 250 grams of forest fruits organic (frozen)
– 6 gelatin sheets
